Tonight's Dinner

While I was on the couch watching K-State play football, Mike was in the kitchen making butternut squash pie and beef stew.  It was definitely a night of comfort foods.

Camping By The Ocean

This was the second time we've camped at Carlsbad.  The first time was December 2007 and it was so cold and no one was camping.  This weekend the campground was full and pretty packed.

The view of the ocean (on the other side of the bluff) from our site.

Mike taking charge of the campfire

Our usual roasted hot dogs for one dinner, this time with some baked beans.

Tasty Burgers the second night.

Keeping warm by the campfire, they have such tall fire rings.

Easter morning breakfast, delicious pancakes.

We are taking a lot of camping trips this year.  This was our second one, our next one is camping outside Yosemite over Memorial Weekend.

Homemade Granola Bars

When my favorite food blogger posted these homemade granola bars on her blog a while back, I couldn't wait to make them.  The recipe is super easy and you can add whatever nuts, seeds, and fruit you want.

We made ours with chocolate chips, mixed dried berries (strawberries, blueberries, and cherries), sunflower seeds, almonds, and pecans.  Almost all our ingredients came from Trader Joe's and Jimbos.

Some of the ingredients.

The dry ingredients ready to toast in the oven.

Mixing in the butter, honey, maple syrup, and brown sugar.

Pressed in the pan ready to set for a couple of hours.

The finished product.

I'm going to call these my K-State Pride Granola Bars!  The wheat germ was packaged at the Quaker Oats factory in Manhattan, KS!  Scott, did you package the wheat germ?
